Thanks, fred! I work at an industrial printing company and we use large rolls of plastic film, resin ribbon, inkjet cartridges, etc. Just this morning there was the sound of cardboard cores bouncing on the cement floor. There is always the hum of printers and the rhythmic pounding of the presses. Oh, and two different streaming internet stations competing with each other. One is typically set on iHeart (gag) Z-100 and the other is MOR deep cuts that range from Gary Puckett and the Union Gap to Eagles and such.

@fred, in fact, on a recent jaunt up north, I did see many, many, many “help wanted” signs at restaurants, and had the same reaction as you. In Burlington VT, some restaurants now close at 8:00, which I don’t recall being the case before — I wonder if it’s due to labor shortages. (OTOH my memory is absolute garbage, so who knows.)

Yeah, and what with the rise in food costs, restaurants are in a bind. I've got a friend who's a restaurant manager and she's said that her food costs have blown up because of distribution issues, so even if she could off a ton more money to workers, she'd have to figure how how much of all of it to pass on to the patrons.

Glad that's not my job.

We both worked in restaurants for years. My dad was a waiter his whole life. We are pretty much dream customers now. K8 and I met in grad school, but it's almost more accurate to say we met because we worked at the same restaurant in grad school.

The only successful restaurant modal was the 20th century diner. Eggs toast and coffee cost my dad less than a dime, sold it for 75 cents, customer would just a leave a dollar as a tip which went right back in the till cause the waitress was my 14 year old sister, and the cash literal 1000 percent profit proceeds would go undeclared in a paper bad bag back to Greece to build a villa.

@Handy, it sad that the distribution chain has a giant middleman like Sysco delivering produce. I guess small farms can’t afford to deliver to restaurants or set up shop in a farmers market, and busy chefs can’t spend too much of their morning hours shopping for produce.Sadly I’ve come to accept that. I guess where I draw the line is restaurants serving ready-made meals from Sysco or other suppliers. Frozen soup. Pasta in a sealed bag that they throw in a pot of boiling water. No restaurant diner should be paying for that. When they could do that at home.
