Room temp, Handy. Woodstock's is the place for pizza in Davis. Cenario makes "east coast style" pizza and, suprisingly, a greek restaurant called Symposium has a decent pie.

I'm in Sacramento. The 2 standouts are Wenelli's and Mark & Monica's. Nothing else sizes up.

Also, if you're from the east coast, pizza out here is much different. Medium thick crust and LOTS of toppings. Have I mentioned the pineapple?

Makes sense from a culinary standpoint, Marie. A lot of people don't lightly sautee their vegetables before putting them on pizza. They end up secreting too much moisture, so the cheese doesn't fully cook.

karlward: not all chicago pizza is deep dish. my favorite is thin-crust, 'party cut'. the deep dish is more popular with tourists than locals, i think (although i enjoy it once in a while)

Having grown up just outside of Chicago, I grew up with pizza that had a thin, crispy crust that was cut into squares made by people who were first or second generation from Italy--the "stuffed" pizza and those thick bready slices associated with Chicago-style, I don't like.

There's a local pizza chain here called Ledos that makes a rectangular pizza with an evenly spaced out array of thick cut pepperoni so you know where to cut the squares. Order it with sausage and they just might perch a crumble of sausage on top of the pepperoni like a greasy little adornment.

Let me dispel this "Detroit-style" pizza for yous guys. Detroit style pizza actually originates from Cottage Inn in Ann Arbor (which is not Detroit). It's a thicker crust rectangular pizza. It's mighty good but it's not "Detroit' style. Any pizza I've ever ate in Detroit (and I've eaten a lot of pizza in Detroit) is round and has crust of normal thickness.

What gets talked about is all in this town or that town, and hard experience tells me that the only thing within walking distance of a train station in NJ is WFMU. Car pizza. Inaccessible. tim, the first year I lived in Ann Arbor, a friend came to visit over Tgiving. I didn't know much about the place yet. We needed to eat, and we saw people going to Cottage Inn, so we went in, took a table. Place was packed. We were greeted very nicely and told that we'd be taken care of soon. We sat there, confused and menuless and then realized that they were doing a Tgiving meal for the unhoused population of Ann Arbor -- and that we had managed to blend right in. We, er, scurried out. Ate at Raja Rani. I don't think I ever want back to Cottage Inn!

So…in New York…circa 1960…if you went into a pizzeria, you asked either for "pizza" (the big round one), or "Sicilian" (the thick rectangular one).

Then…possibly in the 1970s…pizza-makers on Long Island, as the story goes, started getting nostalgic. They longed for that simple home pie that their mothers or grandmothers had made. By all accounts, they started making, for themselves, a rectangular pie…that was much thinner than the standard Noo Yawk Sicilian pie. The tomatoes on it were fresher, sometimes raw, and the cheese was lighter. Someone started calling this neo-pie "Grandma Pizza," after its origins in the Old Country--and it lay dormant among the pizza-making domestic cells of Long Island for a good ten years.

Sounds like Todd doesn't care for Bruce's presentation style. Which reminds me, there was some band on SNL a week or two back who outright stole every one of Springsteen's stage cliches. They were a clone of Bruce & band. I was astonished, I thought they would be served papers before they got off the stage.

i don't like a lot of Springsteen's music -because of arrangement, not composition... but i think he's a stand-up guy

@Handy..thanks for the repost. @Carmichael: It's an observation by Todd, not a criticism. He's merely saying the seriousness with which Bruce presents his material can be offset by the over the topness of Meatloaf's. I worked at Todd's #2 studio of choice in Woodstock for owner/Chief Engineer Chris Andersen. Todd was already gone to SF or Hawaii by the time I got there, but when pressed for info, Chris would open up on some topics. Not gossip, just facts from a guy who spent many years (11) as Todd's road sound guy & more in the studio as well. Chris was a great boss.

Meatloaf was like GaryBusey or something - something wound a little too tight in there & craycray. Head full of backwards political garbage. *Not* like Brooce that way. But that craycray was part of his full bore energy. He never phoned it in vocally. For all that - the only thing by him I care to hear is his RockyHorror tune. & people say one on one he was a nice guy.
