	9:26am Zinn The Mood: Hey Trouble and folks. Sparrows are chirping merrily outside across from the kitchen window, where they have a little vent hole nest in the building across. Listening on the Bose speaker b/c the 2nd old radio/cassette/cd player we’re trying out does not pick up the station. It’s a turn knob instead of digital like the other one. So it goes from WFUV to that horrendous emo/pop punk “alternative” station at 92.3 (which has changed so many times over the years I can hardly recount them all). Anyway, thought the birds might have been from Trouble, but mixed in well with the super stereo Bose speaker. Still do love the turn knob for the singular wonder of discovery as it scans over all possible signals, stumbling over static. Want my kids to have that experience of wonder and discovery (they have a little radio in their room, and I told them I’d look for a little hand held one for them, though of course from 92 on up these days is almost exclusively a commercial nightmare in every way). About to make some falafel soon then out for a walk (with speaker in pocket). Realized I’d been feeling limited at lunch and that I hadn’t made falafel in a while. It’s gonna be a fun experiment tossing things in (chick peas have been soaked overnight so here we go).

So what kind of temps are we going to have for summer, I figured they're going to be a long string of over the top killer heat waves. Cursive flipping global warming!. I rather have normal cold winter temps now so there won't be a excessive number of people dying of heat strokes this summer. I hope this is just the case of me being a worry wart, but we have had a long string of record-breaking hot temperatures these past 6 Summers or more, just saying the signs of the times.

Even when COVID first hit and I did One Last Huge Doomsday Shopping, I bought ONE can of black beans just in case. Fresh chickpeas for falaffel is a MUST! Even more so for hummus. Hummus from canned chickpeas tastes and smells like a construction/craft material to me.

	10:31am Threemoons 🌛🌕🌜: @?! It's also known as a "speed soak"-- you give rinsed picked-over dry beans a hella hard boil for 15 minutes and then let them sit in the pot for an hour, then drain and carry on....
	10:32am WoodsOfNH (now Maine): @?!: Cover beans with water and bring to a boil. Remove from heat, cover, and let sit for an hour. Then cook them...time varies depending on the bean. So you have to check occasionally. Pinto's seem to take about 30 minutes.for example.

Also remember--do NOT add any acids to the pot until the beans are almost done (ie some folks like to put in a splash of ACV or similar if making chili in the same pot--ditto for tomatoes--the beans will NEVER get soft; it's a Chemistry Sciency Thing).

	10:40am Gotta ask: What about yellow split peas? I recently made two soups side by side: one green the other split yellow pea. Green pea soup was perfect and softened up nicely but the yellow was hard as if it hadn’t even cooked. Even after I cooked it a lot longer it’s consistency remained the same. And that was awful. Please advise bean meisters. Oh. And I later discovered that neither green nor yellow required soaking even though I’d soaked both overnight. Did the soaking spoil the broth per se? Thanks for the consideration in advance.

	10:41am Threemoons 🌛🌕🌜: @Gotta Ask you may have just gotten a bag of OLD yellow peas. For any pea soup, I use a flame diffuser and go REALLY low, REALLY slow, adding water and re-boiling as it thickens down. Helps the peas really get properly mushy.

	11:08am Zinn The Mood: We’ll, just spent almost two hours preparing, first the quite hands on, intensive falafel mix, then realized I had razored eggplant and so made a babaghanooj, which of course meant I had to make hummus also. Whew… Handy, first off, thanks for starting the Amazon discussion with regard to paper shortage, supply chain impacting the manufacture of books, etc., and to Trouble for calling attention to it over the airwaves. Amazon really is evil incarnate, in too many ways to express now. Though some of us do use it for some necessities. But convenience is gonna kills us, literally. I loathe this corporate dystopia we’re living through so much I’d better not go any further. For falafel soaked uncooked beans are best. They provide the firmness needed. I prefer to cook beans in a pressure cooker but our broke. Dealing with growing kid’s appetite (who also love hummus regularly like we do) makes me crank it out often, so the cans are piled up here. But for cooking, like Woods said, just put ‘em in a pot and let cook for a while, at least an hour (soaking overnight will help them soften faster). Up on the roof now (it’s north of 60 f’n degrees already) to get some yoga in before going for a long walk. See yiz later, happy cooking and good to be with you all.

Re analog radio for the kids Really nice retro three band portable I got last summer has a great tone and made quite a splash in the YouTube/radio modder community too (overall it has a nice Sony receiver chip at its core but you’re best served replacing the cheap antenna at the least). Company name is 5Core. Indian brand. And yes it can pick up WFMU quite nicely. Good fall back when interference hits the 91.1 signal. Worth a look. Runs on four d cells. 	9:26am Zinn The Mood: Hey Trouble and folks. Sparrows are chirping merrily outside across from the kitchen window, where they have a little vent hole nest in the building across. Listening on the Bose speaker b/c the 2nd old radio/cassette/cd player we’re trying out does not pick up the station. It’s a turn knob instead of digital like the other one. So it goes from WFUV to that horrendous emo/pop punk “alternative” station at 92.3 (which has changed so many times over the years I can hardly recount them all). Anyway, thought the birds might have been from Trouble, but mixed in well with the super stereo Bose speaker. Still do love the turn knob for the singular wonder of discovery as it scans over all possible signals, stumbling over static. Want my kids to have that experience of wonder and discovery (they have a little radio in their room, and I told them I’d look for a little hand held one for them, though of course from 92 on up these days is almost exclusively a commercial nightmare in every way). About to make some falafel soon then out for a walk (with speaker in pocket). Realized I’d been feeling limited at lunch and that I hadn’t made falafel in a while. It’s gonna be a fun experiment tossing things in (chick peas have been soaked overnight so here we go).

So what kind of temps are we going to have for summer, I figured they're going to be a long string of over the top killer heat waves. Cursive flipping global warming!. I rather have normal cold winter temps now so there won't be a excessive number of people dying of heat strokes this summer. I hope this is just the case of me being a worry wart, but we have had a long string of record-breaking hot temperatures these past 6 Summers or more, just saying the signs of the times.

Even when COVID first hit and I did One Last Huge Doomsday Shopping, I bought ONE can of black beans just in case. Fresh chickpeas for falaffel is a MUST! Even more so for hummus. Hummus from canned chickpeas tastes and smells like a construction/craft material to me.

Also remember--do NOT add any acids to the pot until the beans are almost done (ie some folks like to put in a splash of ACV or similar if making chili in the same pot--ditto for tomatoes--the beans will NEVER get soft; it's a Chemistry Sciency Thing).

Green pea soup was perfect and softened up nicely but the yellow was hard as if it hadn’t even cooked. Even after I cooked it a lot longer it’s consistency remained the same. And that was awful. Please advise bean meisters. Oh. And I later discovered that neither green nor yellow required soaking even though I’d soaked both overnight. Did the soaking spoil the broth per se? Thanks for the consideration in advance.

	10:41am Threemoons 🌛🌕🌜: @Gotta Ask you may have just gotten a bag of OLD yellow peas. For any pea soup, I use a flame diffuser and go REALLY low, REALLY slow, adding water and re-boiling as it thickens down. Helps the peas really get properly mushy.

	11:08am Zinn The Mood: We’ll, just spent almost two hours preparing, first the quite hands on, intensive falafel mix, then realized I had razored eggplant and so made a babaghanooj, which of course meant I had to make hummus also. Whew… Handy, first off, thanks for starting the Amazon discussion with regard to paper shortage, supply chain impacting the manufacture of books, etc., and to Trouble for calling attention to it over the airwaves. Amazon really is evil incarnate, in too many ways to express now. Though some of us do use it for some necessities. But convenience is gonna kills us, literally. I loathe this corporate dystopia we’re living through so much I’d better not go any further. For falafel soaked uncooked beans are best. They provide the firmness needed. I prefer to cook beans in a pressure cooker but our broke. Dealing with growing kid’s appetite (who also love hummus regularly like we do) makes me crank it out often, so the cans are piled up here. But for cooking, like Woods said, just put ‘em in a pot and let cook for a while, at least an hour (soaking overnight will help them soften faster). Up on the roof now (it’s north of 60 f’n degrees already) to get some yoga in before going for a long walk. See yiz later, happy cooking and good to be with you all.
