	9:26am YETI BOB: winston: I've done several different ways, both fermented and non. I like to experiment. Depends on the type of pepper and the recipe. Here's one I made that was a big hit, it has a little tequila in it : www.chilipeppermadness.com... There are some simpler recipes at that same website, you don't have to do the ferment but it adds complexity

	9:42am YETI BOB: Handy: Your tap water in Brooklyn is probably chlorinated. You can dechlorinate by boiling for 20 minutes and allowing to cool. (The chlorine boils off). Or some filters will remove chlorine.

Here's one I made that was a big hit, it has a little tequila in it : www.chilipeppermadness.com... There are some simpler recipes at that same website, you don't have to do the ferment but it adds complexity
